More complex and a symbol of the evolutionary potential of Staffolo wine is the Castelli di Jesi Verdicchio Riserva Docg Classico “Rincrocca” . It comes from a rigorous selection of grapes from a vineyard planted in 1972. Fermentation takes place in concrete tanks. Here the wine remains refined on its lees for another 12 months.
