Paitin Estate history started in 1796 when Benedetto Elia purchased from Luigi Pellissero the farmstead with outlying wine cellar and vineyards. His son Giuseppe extended later vineyards and acquired the underground cellar, dating back to XV century. Since 1898 it has been started wine foreign exportation, while since 1893 Barbaresco del Sori Paitin has been produced.
Estate started full activity in 1965 again with Secondo Pasquero-Elia, who built a new wine cellar, by replanting gradually vineyards and acquiring new vines.
At present Secondo Pasquero is working in the cellar together with his sons Giovanni and Silvano, who also opened, in 1997, a farmhouse. Starda is a name of an ancient family of notary, after them was named an house and a small street that runs along the bottom of Serraboella. The soil of the bottom of Serraboella, more sandy and fresher gives gentle Nebbiolos but preserving their superior class. From some years in the Starda the Nebbiolo is not only from Serraboella but from the sandier part of Ca veja.
Tasting Notes: This wine opens with fresh red fruit—think cherry, raspberry, and a touch of rose petal—alongside earthy notes and a hint of spice. With its fine tannins and balanced acidity, it has the structure to age, but is also perfectly enjoyable in its youth. Ideal for pairing with pasta in rich tomato sauces, risotto, or a savory cheese platter.
