Collection: The Paring - Hilt - Jonata Collection

From the owners of Screaming Eagle comes a collection of wines which allow their winemaker Matthew Dees freedom to create great expressions of wine.

The Paring - The Paring wines explore different blending opportunities from three of the best sub-regions of Santa Barbara; Sta. Rita Hills, Santa Maria  Valley, and Jonata’s home base in Ballard Canyon. The vineyards are farmed to rigorous standards, and aged wines are blended together to compliment one another. Even though they are the third child, they are born of the same DNA as Jonata and The Hilt, and treated accordingly. New French oak is judiciously employed and élevage is practiced to ensure perfection upon release. 

The Hilt - Matt Dees Santa Rita project from wind swept ocean facing quadrant of the appellation, these wines are certainly character driven examples of new world Chardonnay and Pinot Noir with both structure and balance. The Hilt owns all of its own vineyards, including Rancho Salsipuedes and its specific vineyards Bentrock, Puerto del Mar, and the dramatic Radian Vineyards.

Jonata - The new cult winery from Santa Ynez, led by dynamic winemaker Matt Dees (Staglin, Craggy Range). Matt, having no degree in winemaking but a degree in Soil Science, brings a “vineyard first” approach to Jonata and perfectly fits the non-traditional amalgamation of grape varieties in their blends. Limited production.
